The Art & Soul of Baking is my favorite baking handbook. Sur La Table and professional pastry chef Cindy Mushet teach you all of the basics, methods and techniques of baking. Each chapter explains ingredients and equipment to be used. The photography is wonderful and throughout the book you will learn "what the pros know."
